Cookies, Seeded Sourdough and a Big Week Filming in NYC

Hey Reader!

I am writing this from New York City, and what a week it has been. I came down to film with Food 52 for my book, and honestly, it still does not feel real. Their whole team was incredible, the studio was beautiful, and it was one of the coolest office spaces I have ever stepped into. I felt lucky to be there the entire time.

And because I cannot come to New York without eating everything in sight, I made my way through the city one slice at a time. I finally tried Lindustrie Pizzeria in Brooklyn, and wow… that place lives up to the hype. The crust, the toppings, the whole vibe, everything was just perfect. They might have a Manhattan location now, too, but the Brooklyn spot was unreal.

It has been such a fun trip and a good reminder of why I love this city so much. The energy, the food, the creativity, it all hits you at once. Feeling very grateful for the chance to be here and for everyone who helped make this trip happen.

Black Friday: My Biggest Sale of the Year (and… my birthday!) 🎉

Alright bakers, it is officially that time of year. Black Friday is coming; it is my biggest sale of the entire year, and it also happens to land right on my birthday weekend. So every year I go a little extra, and this one is no exception.

This is a private, subscribers-only sale that runs Friday November 28 through Cyber Monday December 1.
If you want the emails, you have to click the link below.
If you don’t click it… you will not get any sale notifications. I keep these emails locked down so they only go to people who want them.

Here’s a sneak peek of what is dropping:

  • Simplifying Sourdough – my full step-by-step sourdough system.
  • Simplifying Panettone – holiday baking at max level.
  • Simplifying Sourdough Pizza – restaurant-quality pizza at home.
  • Simplifying Rye Bread – deeply flavourful, earthy, and one of my favourites.
  • Simplifying Baguettes – techniques, shaping, scoring, and everything in between.
  • 50 Best Recipes Workbook – my updated mega-workbook with 50 recipes.
  • The Ultimate Bundle – every single resource at its best price of the year.

💥 Important: The sale emails ONLY go out to people who click the link (I hate spam as much as you).
Every year I get messages saying, “I missed it!”. Do not miss it. This is the time to load up for holiday baking and winter projects.

(Only Black Friday subscribers will receive the sale details.)

The Simply Bread Oven Black Friday Sale Is Here and This One Is Wild 🔥

Alright bakers, real talk for a second.

If you have been following the micro bakery videos, you already know how much this oven means to me. I was one of the very first people to ever bake with the Simply Bread Oven, and it has been with me through everything. I rely on it every single week. It has handled thousands of loaves in the studio and just keeps going. It is honestly one of the most important pieces of equipment I own.

And right now they are running their biggest sale of the year from Nov 24th to Dec 1st!

🧨 What you get during Black Friday

  • 500 dollars off the oven
  • Free shipping on all orders over $100 dollars
  • 5 percent off the slicer and divider
  • 25 percent off all merch and accessories
  • Plus my code SIMPLYDUFFY25 gets you an extra 250 dollars off the oven

Yes, it stacks with everything above.
People literally wait all year for this weekend because it is the lowest price the oven ever hits.

Why I trust this oven with my business

This is the oven we use in the micro bakery. It is compact but it performs like a much bigger machine. The steam, the heat control, the consistency, the design. When Alexandre Laumain was here for the workshops he could not believe what we were pushing out of such a small oven. It handled everything we threw at it.

And their 24 hour support text line is a game changer.
If something goes sideways or you have a question mid bake, you can text them and get help right away. That kind of support is rare.

Want to see it in action? Here are two great videos:

2. Behind the Scenes: A Micro Bakery Day Using the Oven

Both videos give you a real look at how the oven performs under pressure.

If you have been waiting for a sign

This is the sign.
The sale is live until December 1. The entire site is discounted, and you can stack SIMPLYDUFFY25 for an extra 250 off the oven.

I love this oven. I use it all the time. It has been a huge part of the growth of the micro bakery and my content. I would never recommend something I do not use myself.

If you grab one this week, send me a picture of your first bake. I would love to see it.ext

Roasted Onion, Za’atar & Sesame Sourdough 🔥

I posted this loaf on Instagram earlier this week and my messages absolutely exploded. This one has been shared a few times now, but it is so good that I want to make sure nobody misses it.

Roasted onions, za’atar, sesame… it is one of those breads that makes your whole kitchen smell unreal. I first learned a version of this in Italy, and I have put my own little twist on it over the years. It just hits every single time.

One small note. The Excel sheet below follows the same format I use in my micro bakery. You can scale the dough to any size, tweak the hydration, and customize the formula however you like. My 50 Best Recipes Workbook uses this exact system and will be part of the Black Friday sale. For now, use today’s sheet to dial in this loaf.

Give this one a go. It is honestly one of my favourites.

Holiday Cookie Season 🍪✨

We kicked off holiday baking a little early this week, and honestly… I forgot how good these cookies are. The girls and I decorated a whole batch together, and they turned out amazing, crisp edges, buttery centres, and that perfect snap you want in a decorated cookie. They hold their shape beautifully, the icing sets like a dream, and the sourdough discard gives them this subtle little tang that makes the flavour pop.

With the holidays coming up, it is the perfect time to start planning your cookie boxes, class parties, neighbour gifts, or just a fun afternoon decorating with your kids. These cookies have become a yearly tradition for us — the kind where the girls take over the sprinkling duties and I pretend not to care when they pile ten pounds of icing on one snowflake.

These sourdough sugar cookies:

  • roll and cut like a dream
  • bake up crisp and golden
  • hold their shape for decorating
  • taste buttery, light, and slightly tangy in the best way
  • freeze and thaw perfectly (so you can prep ahead!)

If you have sourdough discard in your fridge, this is one of the easiest and most fun ways to use it this season.

Happy decorating, and if your kids take over your kitchen the way my girls do, please send photos so I know I’m not alone.

This week in the micro bakery 🕺 Super Seed Sourdough 🦜

One of the breads we baked this week was a seeded sourdough, and it reminded me why I love this style so much. Hearty, nutty, and full of texture, it is the kind of loaf that feels like a meal all on its own. The roasted seeds give the crust that deep toasted flavour, while the crumb stays soft and open. It might be simple, but it is one of those breads that disappear fast in our house.

I've added the Excel sheet for this loaf below, so you can scale it to any size and customize the formula as needed. This is the same format I use in the micro bakery and it makes planning batches so much easier.

The micro bakery has become one of my favourite parts of my week. There is something special about these small batches, the rhythm of mixing and shaping, and then sharing the results with all of you: simple ingredients, a bit of patience, and a whole lot of love.

Hey Reader! I hope you had a great holiday, full of good food, a bit of rest, and at least one bake that made the mess worth it. Things have finally slowed down here after a very full December in the baking studio. Panettone season is wrapped, the ovens have had a moment to cool off, and I wanted to take a second to say thank you. Whether you ordered panettone, baked it at home, or just followed the process from afar, I really appreciate the support. From my family to yours, thank you for...

Hey Reader! Panettone production is officially in full swing over here, and I won’t lie it’s been a little wild in the baking studio this week. Long days, late nights, dough everywhere… the good kind of chaos. I’ve got one final bake day left, and then full production is done. Woot. We absolutely crushed it this year (both my girls have been hanging panettone and working hard which is adds so much extra joy to the bakes). A small but important change for us this season: I’m not offering...

A jar of organic granola in the micro bakery

Hey Reader! Lately, I have been really enjoying cooking again, both at work and at home. It has that same feeling as my old chef days, just cooking food because I love it. Switching between baking and savoury, playing with different flavours, and not overthinking it. At home, I have been cooking more for the girls too, and honestly, I love making their school lunches a little fancy. Nothing wild, just good food done with care. It has been really nice to slow down and enjoy that side of...
